Pizza on the grill!
I had never experienced pizza on a grill until today…..while in Pennsylvania shooting a grilling cookbook with my pal Paul Lowe, aka Sweet Paul, he came up with this unbelievable combination of pizza and tomatoes on the grill.
So easy – and this is what you need to do:
One ready-made pizza dough
One pint of the most colourful tomatoes you can find
Maldon salt and freshly ground black pepper
Herbs of your choice (basil, rosemary, oregano)
Olive oil
Spread a piece of parchment paper on the counter and paint with olive oil.
Roll the dough out and place on the parchment, paint the top of the dough with the oil.
Light the grill, place the rolled out dough on the hot grill (dough side down) and peel the parchment off.
The dough will start to cook and bubble up. After two minutes turn the dough over and continue to cook.
Place the tomatoes and whatever else you want on the pizza crust, herbs, salt and pepper.
Let it grill a little further (another 2 or 3 minutes) and voila, there you have delicious grilled pizza. Drizzle with olive oil and eat immediately with a glass of rosé.
Nothing like it!

this is my favorite way to make pizza, especially when it’s too hot to turn the ovens on!
