Summer Calamari Salad
Everyone has their ‘go to’ cuisine – some people lean towards Asian food, some towards French, some love good old American. My husband always goes for Mexican inspired dishes (hot sauce is big in this house) but my favourite is undoubtedly Mediterranean. There’s something about the flavours that I just love, rosemary, lemon, garlic, feta, olives, fresh herbs – all of which go perfectly with any seafood or meat…well, in my opinion at least.
Here is a fresh calamari salad that I often make – it’s easy, quick and delicious. And even better when it’s left to ‘stew’ in a vinaigrette.
Fresh Calamari,sliced into rings and cooked in salted boiling water for 2 minutes
Fresh lemon juice, or red wine vinegar is good too
Finely chopped red onion or shallot (just a bit, you don’t want to overwhelm the salad)
Green olives, chopped
Baby tomatoes, the sweetest you can find, sliced in half. Or not, if you’re feeling lazy.
Handful of parsley or whatever else you find in your fridge (I sometimes use thyme and cilantro, dill is really good too)
If you like a bit of heat, add some chopped jalapeno or red pepper flakes
Rock Salt and pepper to taste.
Mix it all up in a bowl and let it sit a few minutes.
Adding a sprinkle of feta just before serving might win you some extra adoration from your calamari salad eating friends…just a thought
